What Chicago requires
Chicago Municipal Code 18-29-1003.13 says: Each owner shall keep a written record of all maintenance of the interceptor or separator for the life of the unit, or for a period of five years, whichever is longer.
The record must be available for review by the Department of Buildings and the Department of Water Management, and sent to either department on request. Chicago does not set a fixed pumping interval; traps must be cleaned as often as necessary to ensure efficient operation

Send what you have. The gap list shows what's missing so you can ask your pumper for copies. We don't create records that don't exist.
Can my pumper send them directly?
Yes. Have them email [email protected] and mention your restaurant.
