Houston rule
- Every grease trap or interceptor inside city limits must be fully pumped at least every 90 days, unless the city approves a Notice of Waiver. Source: Houston Permitting Center, Sec. 47-512(b).
- A waiver requires 12 months in compliance and a 90-day pump-out history. Floating material, sediment, oil and grease must stay under 25% of the trap. Even with a waiver, the trap must be pumped at least every 180 days. Source: Houston Health Notice of Waiver form.
- Use a city-permitted transporter. A city manifest is required for every pump-out, and you keep the white and yellow copies onsite for 5 years. Sources: Houston Health BMPs, Waste Generator FAQ.
Chicago rule
- Commercial kitchens need a grease interceptor or an automatic grease removal device. Source: Chicago Code 18-29-1003.3.1.
- Interceptors must be pumped "as often as necessary to ensure efficient operation." The owner keeps a written maintenance record for 5 years or the life of the unit, whichever is longer, and must show it to the Department of Buildings or Department of Water Management on request. Source: Chicago Code 18-29-1003.13.
- Chicago's code does not set a fixed number of days. Use the schedule your pumper recommends; the 90-day default below is a suggestion, not a city deadline. MWRD also bans putting trap waste back into the sewer and bans additives that dissolve grease. Source: MWRD Sewage and Waste Control Ordinance (2026).
